Hospitality duo Jarrod Walsh and Dot Lee have taken over the former Automata site in Chippendale to open Longshore, a seafood-centric diner and wine bar. Alongside an a la carte selection, Longshore offers a five-course tasting menu of signatures, plus an “experimental” snack flight spanning 10 courses presented in hot and cold stages.
